We have been making mayonnaise at Ballymaloe House for a few generations and one thing we do know is that quality ingredients, in the right amounts, are key to the perfect mayo. Ballymaloe Mayo is made in small batches using Irish free-range eggs and a blend of oils and seasoning, making sure that the traditional recipe is respected.
